Roasted Beat Salad
The salad we serve at Mioposto has torn Greenleaf lettuce, chopped Marcona almonds, fresh herbs, roasted beets and goat cheese. Yum!
White balsamic vinaigrette:
1 cup white balsamic vinegar
2 Tbls whole grain mustard
1 ½ cups olive oil
½ tsp kosher salt
Dash fresh black pepper
¼ cup fresh herbs – we use parsley, rosemary and oregano.
Put everything in a mixer except for the olive oil, salt & pepper.
Drizzle in the oil to emulsify.
Adjust seasoning with salt and pepper.
Add a bit more or less vinegar or oil to your liking.
