Corn Cakes
Mix these ingredients together:
1/2 gallon corn flour
1/2 gallon all purpose flour
1/2 cup baking powder
1 Tbls kosher salt
1 tsp baking soda
Mix these ingredients together:
3 eggs
1 1/2 qts buttermilk
1/2 # melted butter
Add enough of the dry indgredients to the wet to get the typical pancake batter - kind of thick, but still pourable. Do not over mix the batter or it will be tough. Leave a few lumps of flour through out the batter.
Drop onto a greased griddle and turn cakes when you see bubbles forming on top and around the sides of the cakes. Turn quickly with a wide spatula.
We topped our's with Bourbon Maple Syrup. We took real maple syrup (not
immitation) and added a splash of Bourbon. The amount you add, is of course, up to your booze tolerance!
