Adobo Ribs
Cider vinegar 3 cups
Soy sauce 1 cup+1 tbsp
Granulated sugar ½ cup
Chopped garlic 1 ½ tbsp
Kosher salt 1 tbsp
Ground pepper 2 tsp
Bay leaves 5 each
Water 4 cups
Baby back pork ribs 2 racks
Preparation:
Peel the silver skin off the back of the ribs (or have your butcher do this for you). Place the ribs in a pan deep enough to hold them submerged in liquid.
Mix the vinegar, soy, sugar, garlic, salt, pepper, bay leaves and water. Pour the mixture over the ribs and cover with foil. Bake in the oven at 350 for 2 hours. The ribs should be tender, but not falling apart.
Reduce down the braising liquid until thick and use this to brush the ribs with before serving.
